Vegetarian Week Day 2: Polenta

Tonight we made Polenta with black beans. If you like grits, you will like this dish. I'm not a huge grits fan, so I think when I make polenta again, it will be a side dish. I liked it, but I didn't love it. I have a bag of polenta, so perhaps I will seek out some more recipes for using polenta meal. I also will add more Parmesan before eating!
This was my afternoon snack today. I cut up an apple into cubes and stirred in some peanut butter.

Amy's Visit

My friend Amy came to visit me a week ago. It was so very nice to get to hang out with her again! It was almost like college - okay, not really, but close enough!

Amy and I went to D Bar Desserts up in Denver and had a yummy meal/dessert. The owner of D Bar Desserts is on Food Network (which I am a junkie) and I was a bit starstruck to see him there.
We also hung out at a sleepy coffeehouse and I taught (or attempted to teach) Amy how to crochet. We ate some more yummy food from Thai Basil and Colorado Mountain Brewery. It was an awesome weekend!

Raz's 40th

My friend Raz had her 40th birthday this last June (yes, a bit late posting). She had a party at The Warehouse. It was a fun night! Raz, may your 40th year be most fabulous!! Hugs!

Unfortunately, my camera flash gave out on me that night, so I apologize for the picture being dark!

Better pic of Raz - Thanks Dian!

Vegetarian Week Day 1: Field Salad

Candied Pecans and Dried Cranberries
David and I are playing with some different vegetarian meals. We decided to go all vegetarian until Friday. Tonight we had field greens with candied pecans, dried cranberries and Gorgonzola cheese. I put a homemade balsamic vinaigrette on mine (balsamic vinegar, a little extra-virgin olive oil and a bit of honey). I also chopped up some red grapes and tossed into my salad. David had his salad sans grapes and dressing. I was inspired by this dish from a baby shower I attended yesterday. The salad was very similar except the candied pecans were not as sweet as these - I think I prefer the not as sweet pecans.
Tomorrow I'm going to venture into the land of polenta, beans and a side salad.
I will try to remember to take a picture of my meal before I devour it!
