Vegetarian Week Day 1: Field Salad

Candied Pecans and Dried Cranberries
David and I are playing with some different vegetarian meals. We decided to go all vegetarian until Friday. Tonight we had field greens with candied pecans, dried cranberries and Gorgonzola cheese. I put a homemade balsamic vinaigrette on mine (balsamic vinegar, a little extra-virgin olive oil and a bit of honey). I also chopped up some red grapes and tossed into my salad. David had his salad sans grapes and dressing. I was inspired by this dish from a baby shower I attended yesterday. The salad was very similar except the candied pecans were not as sweet as these - I think I prefer the not as sweet pecans.
Tomorrow I'm going to venture into the land of polenta, beans and a side salad.
I will try to remember to take a picture of my meal before I devour it!

We're having a salad very much like that tonight. I forgot to buy cheese at the store though! That will significantly decrease the deliciousness.

Once it's cold again, you should try roasting your own candied nuts -- then you can control the sweetness. It's pretty easy, but use some foil or it really makes a mess. I've used a recycled pie tin before if I just want a few.
